Today was a beautiful Christmas day. I got to use my new Instapot Air Fryer. My husband bought a bag of my yellow potatoes and cut them up according to directions. After spa treatments for 20-40 minutes I layered in two servings into the pot. After twenty minutes my husband and brother had their fries. Then the second round went through for my son and I. Yes, they were yummy but this wasn’t enough, even though everyone had two helpings.

Part two of the meal was far harder than I expected. Four leg quarters, frozen. Sounded easy enough. After all I managed a whole turkey, albeit small for Thanksgiving.

But the quarters were frozen solid in a way that wouldn’t fit the pot. So microwave defrost for more than a half hour. Finally, my husband and I chopped them apart. Once again, I divided the eating teams. Instapotted two while I pulled out my pressure cooker to cook the other two. Instapot was 21 minutes. Pressure cooker only 8. Which should have the insta? Both got the air fry treatment. Both tasted yum! But that dinner left a lot to be desired while using far more kitchen and strength than it should. We will have to rethink how to best use Instapot and air fryer. Mostly I eat salmon and salad or spinach or spring mix. In fact, I haven’t eaten chicken for 40 years. I’m glad we didn’t have company. So, it was a perfect Christmas?

No, really, it was a Wonderful Christmas. I hope yours was, too.

Tasty Tuesday


Success! Spaghetti Squash for a second time in my Instapot. I little olive oil and a sprinkle of salt, and I had a good breakfast. AND I finally figured out why my phone and the pot didn’t connect—the wrong password. So if any of you have an instapot that is wifi connected, you need not give it its own name and password. It needs your wifi name and password. So now I may be able to figure out more things to make and keep track of the cooking without standing in the kitchen watching the pot because, as you know, a watched instapot doesn’t …

I meant to tell you all yesterday that I managed to go to the doctor to set up my PCP. Yay me!!! So now I can get busy and find out what ails me and fix the problems I can. She was happy to hear about my Intermittent Fasting and leaning toward Keto. I am not being harsh with myself. I’m getting better at having salad and salmon or sardines a couple times a day and letting go of the bread, at least, and working on better carbs. My waistband is looser. One of my favorite breakfasts, which is after 12 noon, is salmon with olive oil, garlic, and parsley with spring mix then cheese. Pop in the microwave, and it is beautiful to look at and so tasty. I was a vegetarian until now. I wanted to be vegan but cheese. So I figured I need all that the salmon can give my old body, a lot more protein than I had been able to manage before. And the plus of Keto is cheese. I’m just narrowing my eating time and making sure it is more healthy than before. It’s been a few weeks of growing into it, and I think this is something I can make a good habit of.


So keeping it personal, not political. Potatoes were okay. I needed to use more water. Brown rice not so done as I’d like, maybe need more water. Instapot gets it done without letting out any smell of something cooking. My other pressure cooker make wonderful smells and lets me know when food is just right. So not defeated. Learning curve.

Needle knitting, barely tinked today, no frogging. Win!

Just Jot It January–City


For most of my adult life, I have had a pressure cooker. It went on the stove and cooked my meals nearly as fast as my microwave and far tastier result. Today I received my new one that is considered an instapot. I can hardly wait to try one using electricity! <–See what I did there?

Apparently, I can operate it from my cell phone! Now that is big city! I’ll let you know after I play with it a while what I think. It was a good price, so I hope that it turns out to be a good purchase.
